Jamaican: Jerk Chicken Wings

(serves 4)
Ingredients:
- 12 chicken wings (approx 4 lbs)
- Juice of 3 limes (approx ⅓ cup)
- ½ cup soy sauce
- ¼ cup mild jerk seasoning (see master recipe)
- ¾ cup dark brown sugar
- ⅓ cup ginger paste (approx 3 oz)
- 1 tablespoon liquid smoke
- 12 green onions, cut into 2-inch pieces
- 1 bulb raw garlic, minced (approx 12 cloves)
- 1-2 habanero peppers (or scotch bonnet), seeds removed
Procedure:
- Place chicken wings in a gallon size resealable plastic bag
- Add lime juice, soy sauce, spice mix, brown sugar, ginger paste, liquid smoke to a food processor or blender and blend until sugar is dissolved
- Add remaining ingredients and pulse several times to chop (the result should be somewhat coarse)
- Pour marinade over chicken in bag, seal bag while pressing out excess air then rub marinade over chicken; let rest in refrigerator overnight
- Grill chicken over low heat until it is cooked through, turning frequently and basting often with leftover marinade (about 30 minutes)
- Or: bake in oven at 375° for 45-50 minutes (turn and baste at least once); broil during the last few minus for better browning
