(serves 8)

Mast-o khiar is a side dish that seems to find its way onto almost every Persian table. Thick yogurt is combined with crisp cucumber, fresh herbs, and just a few seasonings to create a cool, creamy side dish found on tables throughout Iran. Like Greek tzatziki or Indian raita, it's served alongside grilled meats, rice, stews, and flatbread, where its bright, tangy flavor balances richer dishes. Humble, versatile, and quick to prepare, it's a reminder that some of the best recipes are also the simplest.
