French: Broccoli with Hollandaise Sauce

(serves 3-4)

Ingredients:

Procedure:

  1. Steam broccoli until soft (about 10 minutes)
  2. Melt the butter in a microwave (about 1 minute, cover to prevent splattering)
  3. Add egg yolks to a mixing bowl
  4. While whisking the yolks, slowly stream in the hot butter until the sauce has emulsified
  5. Add lemon juice and Dijon mustard; whisk until well mixed
  6. Taste, then add salt and pepper
  7. Pour the hollandaise sauce into a small bowl and serve while warm (or reheat in microwave about 10 seconds then mix again; repeat if needed to keep sauce warm)
