French: Broccoli with Hollandaise Sauce

(serves 3-4)
Ingredients:
- 1 lb broccoli florets
- 8 tablespoons (½ cup) unsalted butter
- 3 egg yolks
- 1 teaspoon lemon juice (or more)
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Procedure:
- Steam broccoli until soft (about 10 minutes)
- Melt the butter in a microwave (about 1 minute, cover to prevent splattering)
- Add egg yolks to a mixing bowl
- While whisking the yolks, slowly stream in the hot butter until the sauce has emulsified
- Add lemon juice and Dijon mustard; whisk until well mixed
- Taste, then add salt and pepper
- Pour the hollandaise sauce into a small bowl and serve while warm (or reheat in microwave about 10 seconds then mix again; repeat if needed to keep sauce warm)
