Jamaican: Sticky Sweet Fried Plantains

Ingredients:
- 1 tablespoon coconut oil
- 2 ripe plantains (peeled and cut into ½-inch slices)
- 1 tablespoon pure maple syrup
- 1 tablespoon mild jerk seasoning (see master recipe)
- 1 teaspoon vanilla extract
- ¼ cup dark brown sugar
Procedure:
- Melt coconut oil over medium heat and place plantain slices carefully in skillet without overlapping
- Cook the plantains until browned and crisp on the bottom (around 3-5 minutes); flip the plantains and cook for another 2-4 minutes
- Mix together the rest of the ingredients in a bowl; pour the mixture onto the cooked plantains and toss
